This spring, The Lodge at Geneva-on-the-Lake’s Executive Chef Stephen Gary will launch the 2009 culinary class overnight package series with Seafood and Shellfish on March 27 -28; Love of the Land on April 24 -25; and Soups, Stocks, Sauces, Dressings and Vinaigrettes on May 15 -16.

“Faced with a challenging economy, people who have enjoyed dining out frequently are opting to do more of the cooking themselves. Our culinary classes are designed to meet the needs of those who don’t have time for extensive preparation, are looking to create comfort foods with flair, but still keep within their budgets,” Chef Gary explains.

“The Lodge’s culinary classes are designed to be reflective of current American food trends. Since the financial downturn, our nation has gravitated to the simplicity and economic value of comfort foods, with some new flavors introduced to add a bit of excitement to the familiar,” he adds.

About the Package
Each culinary class getaway package includes a two-hour cooking class with lectures, demonstrations and hands-on preparation, all taught by Executive Chef Stephen Gary. Participants are served the various items covered throughout the class as well as served a local vintage. A take-home package of tips, including recipes, is included. The package includes a one-night stay on Friday and breakfast-for-two on Saturday followed by the two-hour class. The package for two begins at $259 plus tax.

Seafood and Shellfish – March 27 - 28
In this class, participants will discover the secrets of preparing a wide array of seafood and shellfish without breaking the budget. Find out why some fish are better sautéed, others grilled, and still others, fried. Learn about the various types of fish from around the world and gain insights into the spices, flavoring and sauces that can help make a great piece of fish extraordinary. There will also be tips on: how to select seafood and shellfish; understanding fresh versus frozen; how to cook seafood and shellfish indoors; and how to shop with value in mind.

Preparation instruction includes local fish favorites like perch and walleye, along with popular fish such as salmon. Take-home recipes and tips will be provided.

The Love of the Land – April 24 - 25
“The Love of the Land” will give participants tips on how to select and prepare the freshest and most flavorful fruits and vegetables, including organically and locally grown. Discover professional chefs’ secrets to infusing flavors during the cooking process and learn why some fruits and vegetables are better sautéed, grilled, broiled and perhaps not even cooked at all. Preparation tips and recipes will be provided so guests can savor flavorful fruits and vegetable dishes at home.

Prepared fresh fruits and vegetables are among man’s most original comfort foods. Some of the most flavorful and healthiest fruits and vegetables are grown throughout Northern Ohio by farmers who have made their living supplying our restaurants and households for generations. Participants looking to save money and go for the freshest produce possible will also be interested in tips on how to grow your own at home.

Soups, Stocks, Sauces, Dressings and Vinaigrettes – May 15 - 16
What better year-round comfort food than soup, either hot or cold. And we all know how a great sauce can add just the right touch to our favorite dish. Chef Gary offers insights into how to create great soups, stocks, sauces, dressings and more.

Once they discover the ease, cost-efficiency, enhanced taste and health benefits of home-made creations, participants will put their pre-packaged gravies, sauces and dressings aside forever. Demonstrations of natural reduction methods, such as those used by the Horizons culinary team, will be among the featured topics. Take-home recipes and tips will be provided.
